7:00 PM Peppermint Pie Zoom Class with Victoria Lai '01

Join the WCAA and the Washington Wellesley Club for a virtual class on making Wellesley's beloved Peppermint Stick Pie, led by Victoria Lai '01, owner of DC's famous Ice Cream Jubilee!

This event is free to attend and open to all alums from all Clubs and Classes - register here and you'll receive an email with the Zoom link!

Join the Washington Wellesley Club and the Wellesley Alumnae Association in a celebration of the holidays and winter memories at Wellesley College. Victoria Lai, founder of Ice Cream Jubilee and Wellesley Class of 2001, will lead a zoom demonstration of how to make a peppermint stick ice cream pie at home, similar to the pies served at the dorm holiday dinners during her time at Wellesley.

Victoria will lead the virtual class through the step-by-step process of making the Pie - you can prepare ahead of time by gathering the ingredients and materials listed here:

Pie Ingredients 

  • 1 pint whipping cream 
  • 1 can condensed milk (14 oz)
  • 7 candy canes, crushed (3.5 oz) (for the pie)
  • 3 candy canes, crushed (for the garnish)
  • 1 chocolate cookie pie crust
  • Red food coloring (4-6 drops)
  • Peppermint oil (culinary) 
  • Vanilla extract (optional) 
  • Electric Mixer 
  • Blender (optional) 
  • Pastry bag and piping tips  (optional)

Magic Chocolate Sauce

  • 1/2 cup dark chocolate chips
  • 1 1/2 tablespoons coconut oil

Place chocolate and coconut oil in a metal bowl over boiling water. Melt and sir together. (Or microwave 10 seconds at a time in a microwave-safe bowl.) Remove from heat and set aside.
